Asian Food Primer: Papua New Guinea Food

The eastern half of New Guinea, Papua's cuisine differs between the coast, where seafood is plentiful, or the mountains. The food is often very different from that of neighboring Indonesian islands. Food preparations tend to be simple, with sauces.

Common ingredients:

Mortar and Herbs

pork, seafood, yams, pandanus nuts (in the mountains); sweet potatoes, vegetables, coconuts, sago (from the sago palm), spices

Popular dishes:

pork grilled over hot stones; boiled shrimp; grilled fish with pepper and onion
